Some metrics to use when deciding whether or not you can trust a hosting provider are client reviews, amount of time in business and technical support. Client reviews are probably the most helpful as they will give you an idea of other peoples actual experiences with the company. If you see many positive and very few negative reviews, it is likely that people are happy with the company. However, reviews can be abused, so it's probably best to look a little deeper.
The amount of time a company has been in business can provide you with a few pieces of useful information. Number one, it will tell you whether or not they are a fly by night company out to make a quick buck. Second, it will tell you if they have the funds to stick around for a while. Granted, this isn't 100% accurate, but it's likely if a company has been in business for 10+ years, it will be in business for another 10+ years. It will also give you an idea of the type of experience the host has. Many years in the industry will mean the company has seen a lot of changes and dealt with many different types of circumstance.
Technical support is the last on my list, but just as important as the others. 24/7 technical support will mean there is always someone around to help you out. This also means that the servers have someone monitoring them 24/7. This sort of goes hand in hand with uptime as having someone there generally pushes uptime up.
