Separate Services on Different Servers

Does anyone here separate off email and database servers to their own servers for cPanel servers?

eg. 1 dedicated server for shared hosting (web), uses 1 dedicated server for just email and 1 dedicated server for database

If so I am curious how you set up the email server to work with the cpanel server.
