Desirable Server Locations?

The Internet services and labour is expensive and you'd compete to anyone - from big corporations to smaller but very well positioned web hosts. You'd better find any specific market, where you can have a low production costs.
 
Amsterdam is the best location for global connectivity indeed! And one of the most stable locations as well. Besides there are plenty of Data centers operating there. One of the best data centers in the world in fact not only in terms of network and support, but pricing as well.

Although I am not sure about Tokyo. Bandwidth in Asia is generally quite expensive. But certainly, Japan has got one of the best connectivity around the world. And if I can remember, their average internet connection speed is in the Top 5 countries.

Indeed you are correct, Japan is even #2 in the world, after Hong Kong, in terms of fastest internet connection, surpassing the global average by around 3 times. However, to be honest, I haven`t had much experience with the datacenters there.

For US locations I can definately recommend Chicago, with Houston, Dallas and Ohio being pretty close to that quality.
For Europe - definately Amsterdam. You can also check out Iceland, there were projects for datacenters there for years, but they were delayed by the financial crisis and the volcano eruption. Being amongst the top for Internet usage and fast international Internet bandwidth and having a perfect natural environment for servers, I predict there would be a boom in the Datacenter usage there, but still those services are pretty costly for now :rolleyes2

There is a trend of data center moving to the Northern European countries such as Iceland, Sweden, Norway due to the cool climate. Meanwhile I agree that Amsterdam is already a big Internet hub in Europe, Sweden is becoming a good location too, that you can consider.
 
I would look at the location of the client, their requirements and the connectivity options to each of the locations, keep an ongoing spreadsheet, visit all (where possible) locations and then make recommendations on a 1 to 1 basis, your clients will appreciate the effort and you may end up gaining more referrals because of it.
 
You should consider your client's target audience. This is what matters most for physical server location. Less hops will give you great transfer speeds
