I know we have a few members who are experts at this, so I am looking for any recommendation on a good carrot juice recipe. Something that is easy to make in-house.

I bought the whole box of carrots. I certainly can't eat them as fast.

Mostly it is just used as a healthy beverage on its own.
You can used it instead of water in protein shakes etc.

If you are looking for a far less healthy way to use those carrots try this:

2 cups all-purpose flour, sifted after measuring
1 teaspoon salt
2 teaspoons baking soda
1 tablespoon ground Ceylon cinnamon
1 tablespoon cocoa powder
1 cup light brown sugar
1 cup granulated sugar
1 1/4 cups peanut oil
4 eggs
1 tablespoon vanilla extract
3 cups finely grated carrots

Frosting, recipe follows
Preheat oven to 350 degrees F.
Lightly butter and flour the cake pans.
Put the flour, salt, baking soda, cinnamon, and cocoa in a mixing bowl, and whisk together to blend. Put the sugars in a large mixing bowl, and whisk in the peanut oil. Then whisk in the eggs, 1 at a time, followed by the vanilla. When fully blended, add the flour mixture all at once, and mix just until smooth. Stir in the grated carrots. Divide the batter evenly between the 3 cake pans. Drop each pan sharply onto the counter from a height of about 6 inches to remove any air pockets. Bake for 25 minutes, or until the center springs back gently when touched. Remove from the oven and place on cooling racks until completely cooled; then unmold.
Place 1 of the cake layers, bottom side up, on a cake plate or pedestal. Spoon approximately 1/4 of the frosting onto the layer, and spread it over evenly. Place a second layer, bottom side down, on top of the first, and spread with an equal amount of frosting. Place the final layer, bottom side down, on top of the others and frost the top and sides with the remaining frosting. Store in a cool but not refrigerated area until ready to serve.
Frosting:
12 tablespoons (1 1/2 sticks) unsalted butter, chilled and cut into 2-inch pieces
24 ounces cream cheese, chilled
1 1/2 cups confectioners' sugar, sifted
1 teaspoon vanilla
1 1/2 cups chopped pecans
Place the butter in the mixing bowl of an electric mixer. Mix on medium speed just until the butter begins to become malleable, about 3 to 4 minutes. Add the cream cheese, in pieces, and mix until thoroughly blended. Slowly add the confectioners' sugar and vanilla, and mix until blended. Increase mixer speed slightly, and continue mixing for 2 to 3 minutes, until the frosting becomes light and fluffy.

On a side note, Art - your carrots came in a box? Ours come in bags...weird.

The process indeed sounds too complicated for me really - the chances are - I will mess it up. Should have bought a box of oranges... (as in: We should have bought a squirrel) :rolleyes:

Oh, and John, they come in bags, but so many bags that require a box.
 
Oh, holy crap Art! That's a lot of carrots. You could make some carrot cake...martini style!

Here are a few for you -

Carrot Blush

Ingredients
4 carrots
beet with greens
5 - 6 leaves of Romaine or other leaf lettuce
3 - 4 leaves of spinach

Directions
Scrub organic carrots or peel the carrots if they are not organic. Clean and cut beet into slender wedges, and wash & dry lettuce and spinach leaves. Juice half of the carrots, and the beet, then you may use the remaining carrots to help push the lettuce and spinach through the juicer.

Carrot Lemonade

Ingredients
4-5 medium carrots
1/2 medium lemon
1 mildly tart apple (fujis or galas are nice)
1 small 1.5 - 2 " wedge red cabbage
1 round of ginger, about the size of a quarter

Directions
Juice all, preferably organic, ingredients and enjoy!

Jamaican Carrot Juice

Ingredients
2 lbs carrots
5 cups rice or soy milk
1 cup silkin soft tofu
1 teaspoon finely grated nutmeg
1 teaspoon vanilla

Directions
Scrape outer skin of carrots
Cut carrots into chunks then blend (puree) with milk in blender.
Pour through strainer into container
Keep juice & discard pulp in strainer
Add tofu & vanilla.
And mix
Sprinkle nutmeg on top of juice & mix lightly. Best served with crushed ice

Jamaican Carrot Juice sure sounds good. That with carrot cake - and you won't see me around for a few days...
 
Hi Art ....

You getting into the "juicing craze"??? I thought about it ... but my body would revolt if I started eating healthy this late in life :)

One of the best drinks I have tasted for protein, potassium, and taste...

1 cup - Low fat milk
1 package of Vanilla Carnation Instant Breakfast
2 Carrots
1 can pineapple (approx. 4 fresh slices, if slicing fresh pineapple)
1/2 cup Coconut
1- banana
1/2 cup of ice

Mix in blender on whip.
 
I have no clue lol.

I made it up one night about 4 years ago, when I was working out daily. I have a few others too, that have nothing to do with carrots heh, but since you seem to be on a carrot kick....this was the one I posted. If you want the others....let me know.
